Fresh Tomato Avocado Pasta

12 oz (340g) spaghetti or linguine pasta

2 cups cherry tomatoes, halved

1 ripe avocado, diced

3 cloves garlic, minced

1/4 cup fresh basil leaves, roughly chopped

1/4 cup olive oil

1 tablespoon balsamic vinegar

1 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

Grated Parmesan cheese (for serving)

Extra basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and lightly golden. Be careful not to burn the garlic.

      Add Tomatoes: Stir in the halved cherry tomatoes and red pepper flakes (if using). Cook for another 5-6 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.

        Combine Pasta and Sauce: Add the cooked pasta to the skillet with the tomatoes. Pour in the reserved pasta water, balsamic vinegar, and half of the chopped basil. Toss everything together to combine. Season with salt and black pepper to taste.

          Add Avocado: Gently fold in the diced avocado, being careful not to mash it. Allow the mixture to sit for a minute to heat the avocado slightly.

            Serve: Plate the pasta and top with the remaining basil, some freshly grated Parmesan cheese, and a drizzle of olive oil. Garnish with additional basil leaves if desired.
