3 large ripe tomatoes, diced (preferably heirloom for variety)

2 cups fresh sweet corn kernels (about 3-4 ears of corn)

1 medium red onion, finely chopped

1 red bell pepper, diced

1 cucumber, peeled and diced

1/4 cup fresh basil leaves, chopped

1/4 cup crumbled feta cheese (optional)

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

Salt and pepper to taste

Prep the Corn: If using fresh corn, shuck the ears and remove the kernels by standing the cob upright in a bowl and slicing downwards with a knife. Set aside.

    Mix the Vegetables: In a large mixing bowl, combine the diced tomatoes, corn kernels, red onion, red bell pepper, cucumber, and chopped basil. Toss gently to mix.

      Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper until well combined.

        Combine: Drizzle the dressing over the salad and toss gently to combine, ensuring all the vegetables are coated with the dressing.

          Add Cheese: If you’re using feta cheese, add it to the salad and give it a light toss.

            Chill and Serve: Let the salad sit for about 10 minutes at room temperature to allow the flavors to meld. Serve immediately or chill in the refrigerator for up to an hour before serving.
