4 cups fresh tomatoes (heirloom varieties preferred), diced

2 cups sweet corn, freshly shucked or frozen and thawed

1 small red onion, finely chopped

1 medium cucumber, diced

1 cup bell peppers (assorted colors), diced

1/4 cup fresh basil leaves, chopped

1/4 cup freshly squeezed lemon juice

3 tablespoons olive oil

1 teaspoon honey or agave syrup

Salt and pepper to taste

Optional: Crumbled feta cheese for topping

Instructions
 

Prepare the Veggies: If using fresh corn, shuck it and cut the kernels off the cob. In a large mixing bowl, combine the diced tomatoes, sweet corn, chopped red onion, diced cucumber, and mixed bell peppers.

    Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, honey or agave syrup, salt, and pepper until well combined.
