4 cups fresh, ripe tomatoes (heirloom or vine-ripened), diced

2 cups fresh corn kernels (about 3-4 ears of corn)

1 medium red onion, finely chopped

1 cup cucumber, diced (optional, for added crunch)

1/2 cup fresh basil leaves, torn

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon honey (or agave syrup for a vegan option)

Salt and black pepper, to taste

Crumbled feta cheese (optional, for garnish)

Prep the Corn: If using fresh corn, shuck the ears and remove the kernels using a sharp knife. To do this, hold the ear upright in a bowl to catch the kernels as they fall. For a charred flavor, you can also grill the corn beforehand before cutting off the kernels.

    Combine Ingredients: In a large mixing bowl, add the diced tomatoes, corn kernels, red onion, cucumber (if using), and torn basil leaves. Gently toss to combine.
