4 medium ripe summer tomatoes, diced

2 cups fresh sweet corn kernels (about 3-4 ears)

1 medium red onion, finely chopped

1 red bell pepper, diced

1 cup cucumber, peeled and diced

1 small jalapeño, seeded and minced (optional for heat)

1/4 cup fresh basil, chopped

1/4 cup fresh cilantro, chopped

3 tablespoons olive oil

2 tablespoons balsamic vinegar

Salt and pepper, to taste

Juice of 1 lime

Prepare the Corn: If using fresh corn, remove the kernels from the cob by cutting downwards with a sharp knife. For frozen corn, just thaw it by running under warm water and draining.
