4 large heirloom tomatoes, diced

2 cups fresh corn kernels (about 3-4 ears of corn)

1 small red onion, finely chopped

1 cucumber, diced

1 bell pepper (any color), diced

1/4 cup fresh basil leaves, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon honey

Prep the Corn: If using fresh corn, remove the husks and silk. To cook the corn, you can either grill it for a smoky flavor or boil it in salted water for about 3-5 minutes until tender. Once cooked, cool the corn in an ice bath, then cut the kernels off the cob and set aside.
