Fresh Summer Tomato and Corn Salad

4 medium ripe tomatoes, diced

2 cups fresh corn kernels (about 3-4 ears of corn)

1 medium cucumber, diced

1/2 red onion, finely chopped

1/4 cup fresh basil leaves, torn or chopped

1/4 cup crumbled feta cheese (optional)

3 tablespoons extra-virgin olive oil

2 tablespoons red wine vinegar

Salt and pepper to taste

1 teaspoon honey (optional, for sweetness)

Instructions
 

Prepare the Corn:

    Shuck the corn and remove the kernels from the cob using a sharp knife. You can also use frozen corn if fresh is not available—just thaw it beforehand.

      Combine the Ingredients:

        In a large mixing bowl, place the diced tomatoes, corn kernels, cucumber, and chopped red onion. Gently toss to combine the ingredients evenly.

          Make the Dressing:

            In a small bowl, whisk together the olive oil, red wine vinegar, honey (if using), salt, and pepper until well emulsified.

              Add Herbs and Cheese:

                Pour the dressing over the salad mixture. Add the fresh basil and feta cheese (if using) to the bowl. Toss gently to coat all the ingredients evenly with the dressing.

                  Chill and Serve:

                    Allow the salad to sit for about 20 minutes at room temperature or refrigerate for up to 1 hour to let the flavors mingle. Serve chilled or at room temperature.

                      Garnish:

                        Just before serving, give the salad a final toss and taste for seasoning. Adjust salt and pepper as necessary and garnish with additional basil leaves if desired.
