4 cups fresh tomatoes, diced (heirloom or vine-ripened for the best flavor)

2 cups sweet corn kernels (fresh or thawed frozen)

1 small red onion, finely chopped

1 medium cucumber, diced

1/4 cup fresh basil leaves, torn

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons extra-virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon honey or agave syrup

Salt and black pepper, to taste

Prep the Veggies: Start by washing all your vegetables thoroughly. Dice the tomatoes, cucumber, and finely chop the red onion. If using fresh corn, cut the kernels off the cob.

    Mix the Salad: In a large bowl, combine the diced tomatoes, sweet corn, chopped red onion, and cucumber. Toss them gently to combine.
