Ingredients

3 medium zucchinis (spiralized into noodles)

1 cup cherry tomatoes (halved)

1 cup fresh mozzarella balls (bocconcini), drained

½ cup fresh basil leaves (torn)

3 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Optional: red pepper flakes for a spicy kick

Instructions

Prepare the Zoodles: Use a spiralizer to create zoodles from the zucchinis. If you don't have one, you can also use a vegetable peeler to make thin strips. Place the zoodles in a colander, sprinkle with a little salt, and let them sit for 10 minutes to remove excess moisture.

Mix the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, garlic powder, salt, and pepper. Adjust the seasoning according to your taste.

Combine the Ingredients: In a large bowl, gently combine the spiralized zucchini, halved cherry tomatoes, fresh mozzarella balls, and torn basil leaves.

Dress the Salad: Pour the prepared dressing over the salad mix and toss gently to coat all ingredients evenly.

Let it Rest: For the best flavor, let the salad sit for about 10 minutes before serving. This allows the zoodles to soak in the dressing slightly.

Serve: Divide the salad into serving bowls and, if desired, sprinkle with red pepper flakes for an added kick. Enjoy immediately!
