2 cups fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/2 cup extra-virgin olive oil

1/3 cup pine nuts (or walnuts)

2 cloves garlic, minced

For the Salad:

12 oz cheese tortellini (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, thinly sliced

1/4 cup black olives, sliced (optional)

1/4 cup feta cheese, crumbled

Fresh basil leaves for garnish

Instructions
 

Prepare the Pesto:

    - In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, and minced garlic. Pulse until finely chopped.

      - While the processor is running, slowly drizzle in the olive oil until the mixture is smooth and well combined. Scrape down the sides as needed.

        - Season with salt and pepper to taste. Set the pesto aside.

          Cook the Tortellini:

            - Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente (usually about 3-5 minutes for fresh tortellini or 7-9 minutes for frozen).

              - Drain the tortellini and rinse under cold water to stop the cooking process. Set aside to cool.

                Combine the Ingredients:

                  - In a large mixing bowl, combine the cooled tortellini, cherry tomatoes, cucumber, red bell pepper, red onion, black olives (if using), and feta cheese.

                    - Pour the prepared pesto over the salad and toss gently to ensure everything is coated evenly.

                      Serve:
