Choosing the perfect sourdough is crucial for creating a delicious fig jam sandwich melt. Look for a loaf that is freshly baked, with a robust crust and airy interior. A good sourdough should have a slightly tangy flavor that complements the sweetness of the fig jam. Ideally, select a bread that is at least a day old, as this will help it toast better without becoming overly soggy when the cheese melts.

Ingredients

8 slices of sourdough bread

1 cup fig jam

8 ounces goat cheese, softened

4 ounces creamy brie, sliced

4 tablespoons unsalted butter, softened

2 teaspoons fresh thyme leaves (optional)

Salt and black pepper to taste

Instructions

Prepare the Bread: Lay out the sourdough slices on a clean surface. Spread a generous layer of fig jam on four of the slices.

Layer the Cheese: On top of the fig jam, spread the softened goat cheese evenly. Then, add slices of brie over the goat cheese. If using, sprinkle fresh thyme leaves over the brie for added flavor.

Top and Season: Place the remaining slices of sourdough on top of each cheese layer to form your sandwiches. Lightly season with salt and pepper for an extra kick.

Butter the Bread: Spread a thin layer of the softened butter on the outside of each sandwich. This will help achieve a beautifully golden and crispy crust when cooked.

Grill the Sandwiches: Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet, buttered side down, and cook for about 3-4 minutes until golden brown. Carefully flip the sandwiches using a spatula.

Melt and Finish: After flipping, butter the top side of the sandwiches and continue to cook for another 3-4 minutes or until the cheese is melted and the bread is golden and crispy.

Slice and Serve: Remove the sandwiches from the skillet, let them rest for a minute, and then slice in half. Serve warm with a side of fresh fruit or a simple green salad.
