1 pound fresh green beans, trimmed

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, grated

2-3 tablespoons Szechuan peppercorns

1-2 tablespoons chili paste (adjust according to heat preference)

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon rice vinegar

1 teaspoon sugar

1/4 cup roasted peanuts (for garnish)

2 green onions, thinly sliced (for garnish)

Optional: Sesame seeds for garnish

Prepare the Green Beans: Begin by blanching the green beans in a pot of boiling salted water for about 2-3 minutes until they are bright green but still crunchy. Drain and transfer them to an ice bath to halt the cooking process. Once cooled, drain again and set aside.

    Heat the Oil: In a large wok or skillet, heat the vegetable oil over medium-high heat until shimmering but not smoking.

      Add Aromatics: Add the minced garlic and grated ginger to the oil, stirring quickly to avoid burning. Sauté for about 30 seconds or until fragrant.
