1 pound elbow macaroni

4 cups shredded sharp cheddar cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

4 cups milk

1/2 cup unsalted butter (1 stick)

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon mustard powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (for topping)

1 tablespoon olive oil (for breadcrumbs)

1/4 cup chopped fresh parsley (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni until al dente, according to package directions. Drain and set aside.

      Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until bubbly and golden. Gradually pour in the milk, whisking continuously to prevent lumps. Cook for about 5-7 minutes or until the mixture thickens and starts to simmer.

        Add Spices and Cheese: Stir in the garlic powder, onion powder, mustard powder, smoked paprika, salt, and pepper. Remove from heat, then gradually add the cheddar and mozzarella cheese, stirring until completely melted and smooth.

          Combine Pasta and Sauce: In a large mixing bowl, combine the cooked macaroni and cheese sauce. Mix well until all the pasta is fully coated.

            Prepare for Baking: Transfer the mac and cheese mixture into a greased 9x13-inch baking dish, spreading it evenly.

              Breadcrumb Topping: In a small bowl, mix the breadcrumbs with olive oil until they are evenly coated. Sprinkle the breadcrumb mixture over the mac and cheese.

                Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and crispy.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. If desired, sprinkle with chopped parsley before serving.
