Ingredients

1 pound ground turkey

1 cup stuffing mix (your choice, cornbread or herb)

1 cup chicken broth (low sodium)

1 cup chopped celery

1 cup chopped onion

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried sage

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

2 large eggs, beaten

1/2 cup shredded mozzarella cheese (optional, for added cheesiness)

Fresh parsley, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and greasing a 12-cup muffin pan or lining it with paper liners.

Sauté the Vegetables: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped celery, onion, and garlic, sautéing until they turn translucent and fragrant, about 5-6 minutes.

Brown the Turkey: Add the ground turkey to the skillet with the sautéed vegetables. Cook until the turkey is browned and fully cooked, breaking it apart with a spatula, for about 6-8 minutes. Drain any excess fat if necessary.

Mix Ingredients: In a large bowl, combine the cooked turkey mixture with the stuffing mix, chicken broth, thyme, sage, black pepper, and salt. Stir until just combined. If you want a cheesy version, fold in the shredded mozzarella cheese at this stage.

Add Eggs: Pour in the beaten eggs and mix everything together until the mixture is well incorporated. The eggs will help bind the mixture.

Fill the Muffin Tin: Using a spoon or an ice cream scoop, fill each muffin cup with the turkey and stuffing mixture, pressing lightly to ensure they're packed but not too tightly.

Bake: Place the muffin pan in the preheated oven and bake for 25-30 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Garnish: Once baked, remove the pan from the oven and allow the muffins to cool for about 5 minutes. Then, gently pop the muffins out of the pan and place them on a cooling rack.

Serve: Garnish with fresh parsley, if desired. Serve warm as a nutritious family meal or appetizer.

Enjoy: These muffins make a perfect comfort food, great for any family gathering or casual dinner!
