12 lasagna noodles

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

6 cups fresh spinach (or 1 box frozen spinach, thawed and drained)

1 ricotta cheese (15 oz)

1 egg

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups marinara sauce

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Noodles: Cook the lasagna noodles in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, layering them flat on a baking sheet to prevent sticking.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent, about 3-4 minutes.

        Cook the Spinach: Add the fresh spinach to the skillet and cook until it is wilted (or if using frozen spinach, cook until heated through). Season with Italian seasoning, salt, and black pepper. Stir to combine, then remove from heat and let cool slightly.

          Mix the Cheese Filling: In a large mixing bowl, combine the ricotta cheese, egg, half of the mozzarella cheese (1 cup), and half of the Parmesan cheese (½ cup). Stir in the sautéed spinach mixture and mix until well incorporated.

            Assemble the Lasagna:

              - Spread a thin layer of marinara sauce (about ½ cup) on the bottom of a 9x13 inch baking dish.

                - Place 3 lasagna noodles on top of the sauce.

                  - Spread half of the cheese and spinach mixture over the noodles, followed by ⅓ of the marinara sauce.

                    - Repeat the layers (noodles, cheese mixture, sauce) one more time.

                      - Finally, top with the remaining 3 lasagna noodles and cover with the remaining marinara sauce. Sprinkle the remaining mozzarella (1 cup) and Parmesan (½ cup) cheese on top.

                        Bake: Cover the baking dish with aluminum foil (avoid touching the cheese) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                          Cool and Serve: Allow the lasagna to cool for about 10-15 minutes before slicing. Garnish with fresh basil leaves if desired. Serve warm and enjoy!
