Fall Crockpot Pasta Primavera

8 oz. whole wheat penne pasta

2 cups broccoli florets

1 cup diced bell peppers (red and yellow)

1 cup sliced carrots

1 cup cherry tomatoes, halved

1 medium zucchini, sliced

1 cup sliced mushrooms

4 cloves garlic, minced

1 onion, finely chopped

3 cups vegetable broth

1 tsp Italian seasoning

½ tsp red pepper flakes (optional, for heat)

1 cup pesto (store-bought or homemade)

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Fresh basil, for garnish

Instructions
 

Prep the Vegetables:

    Start by washing and prepping all the vegetables. Chop, slice, and dice them as instructed to ensure even cooking.

      Layer the Ingredients:

        In the crockpot, layer the vegetables starting with the onion, followed by the broccoli, bell peppers, carrots, zucchini, mushrooms, and cherry tomatoes.

          Add Pasta and Seasonings:

            Carefully pour the uncooked penne pasta on top of the vegetables. Sprinkle the Italian seasoning, red pepper flakes, salt, and pepper evenly over the pasta.

              Pour in the Broth:

                Gently pour the vegetable broth over the layered ingredients in your crockpot. Do not stir yet; let the broth settle to ensure even cooking.

                  Cook on Low:

                    Cover the crockpot and set it to low for 4-5 hours, or until the pasta is tender and the vegetables are cooked through. If you're in a hurry, you can set it to high for 2-3 hours.

                      Stir in the Pesto:

                        Once cooking is complete, carefully stir in the pesto until all the ingredients are well combined and coated. Taste and adjust seasoning if needed.

                          Serve:
