Prepare the Herb Butter: In a small mixing bowl, combine the softened butter, chopped cranberries, rosemary, thyme, minced garlic, honey, salt, and pepper. Mix until well blended. Transfer the butter mixture onto a piece of plastic wrap, form it into a log shape, and twist the ends to seal. Chill in the refrigerator for at least 30 minutes to firm up.
Marinate the Lamb Chops: In a shallow dish, mix the olive oil, balsamic vinegar, salt, and pepper. Add the lamb chops, ensuring they are well coated. Let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for a deeper flavor.
Preheat the Grill: If using a grill, preheat it to medium-high heat. Alternatively, you can use a skillet over medium-high heat on the stove.
Cook the Lamb Chops: Remove the lamb chops from the marinade, allowing excess liquid to drip off. Place the chops on the grill or in the skillet, cooking for about 4.5 minutes on each side for medium-rare, depending on thickness. Adjust cooking time for desired doneness.
