Easy Thai Peanut Noodle Salad

8 oz rice noodles

1 cup shredded carrots

1 bell pepper, thinly sliced (red or yellow)

1 cup red cabbage, shredded

1 cup cucumber, thinly sliced

1/2 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/4 cup unsalted peanuts, chopped (optional, for garnish)

For the Peanut Sauce:

1/3 cup creamy peanut butter

2 tbsp soy sauce

2 tbsp lime juice

1 tbsp honey or maple syrup

1 clove garlic, minced

1 tsp grated ginger

2-3 tbsp water (to adjust consistency)

Red pepper flakes (to taste, optional)

Instructions
 

Cook the Noodles: In a large pot of boiling water, cook the rice noodles according to package instructions. Once tender, drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Salad Base: In a large mixing bowl, combine the shredded carrots, sliced bell pepper, shredded red cabbage, sliced cucumber, chopped cilantro, and green onions. Toss gently to combine.

      Make the Peanut Sauce: In a medium bowl, whisk together the creamy peanut butter, soy sauce, lime juice, honey or maple syrup, minced garlic, grated ginger, and red pepper flakes if using. Gradually add water, one tablespoon at a time, mixing until you reach your desired sauce consistency.

        Combine: Add the cooked rice noodles to the bowl of vegetables. Pour the peanut sauce over the noodles and veggies. Toss everything together until well combined and evenly coated with the sauce.

          Serve: Transfer the salad to serving bowls or a large platter. Sprinkle chopped peanuts on top for added crunch, if desired.
