2 cups cooked white rice

2 cups cooked, shredded chicken (rotisserie chicken works great!)

1 can (10.5 oz) condensed cream of chicken soup

1 cup chicken broth (low sodium)

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 cup shredded cheddar cheese (plus more for topping)

Salt and pepper to taste

1 tablespoon olive oil (optional, for greasing the dish)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Grease the Casserole Dish: Lightly grease a 9x13 inch casserole dish with olive oil to prevent sticking.

      Mix the Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, thyme, salt, and pepper. Mix well until all ingredients are evenly coated.

        Assemble the Casserole: Pour the mixture into the prepared casserole dish. Spread it out evenly.

          Add Cheese: Sprinkle the shredded cheddar cheese over the top of the casserole, adding more cheese if desired.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
