Easy Peach Yogurt Popsicles

2 large ripe peaches, pitted and diced

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust for sweetness)

1/4 cup freshly squeezed lemon juice

1/2 teaspoon vanilla extract (optional)

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Peaches: Start by washing the peaches. Slice them in half, remove the pits, and chop them into small pieces. If you prefer a smoother texture, you can also blend them into a puree.

    Blend the Mixture: In a blender or food processor, combine the diced peaches, Greek yogurt, honey or maple syrup, lemon juice, vanilla extract, and salt. Blend until smooth. Taste and adjust sweetness if necessary.

      Pour into Molds: Carefully pour the yogurt-peach mixture into popsicle molds, filling each mold about 3/4 full to allow for expansion during freezing. If desired, you can reserve some diced peaches to mix in for added texture.

        Insert Sticks: If your molds come with sticks, insert them now. If not, you can wait until the popsicles are partially frozen before inserting wooden sticks.

          Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

            Remove from Molds: To serve, run warm water over the outside of the molds for a few seconds to help release the popsicles. Gently pull the popsicles out, being careful not to break them.

              Serve and Enjoy: Garnish with fresh mint leaves if desired. These popsicles are perfect for a refreshing treat on a hot day!
