1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

4 whole wheat tortillas or wraps

1 cup fresh spinach leaves

1 cup diced tomatoes

1/2 cup crumbled feta cheese

1/4 cup red onion, thinly sliced

1/4 cup tzatziki sauce (store-bought or homemade)

Instructions
 

Marinate the Shrimp: In a large bowl, combine the olive oil, oregano, thyme, garlic powder, smoked paprika, salt, and pepper. Add the shrimp and toss to coat evenly. Allow the shrimp to marinate for at least 15 minutes.

    Preheat the Grill: Heat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for about 10 minutes to prevent burning.

      Skewer the Shrimp: If desired, thread the marinated shrimp onto the soaked skewers (this makes them easier to handle on the grill). Alternatively, you can grill them without skewering.

        Grill the Shrimp: Place the skewered or unskewered shrimp on the grill. Cook for 2-3 minutes on each side, or until they are pink and opaque. Remove from heat and let them rest for a minute.

          Assemble the Wraps: Lay a whole wheat tortilla flat and spread a layer of tzatziki sauce in the center. Top with fresh spinach, diced tomatoes, grilled shrimp, crumbled feta, and a few slices of red onion.

            Wrap it Up: Fold in the sides of the tortilla and then roll from the bottom up to secure all the delicious fillings inside.
