4 boneless, skinless chicken breasts

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach, chopped

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh basil leaves (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the sun-dried tomatoes and Italian seasoning.

        Add Cream and Cheese: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and well combined.

          Add Spinach: Add the chopped spinach to the sauce, mixing everything together until the spinach has wilted.

            Combine and Bake: Return the seared chicken to the skillet, spooning some of the sauce over the top. If your skillet is oven-safe, transfer it directly; otherwise, place the chicken and sauce in a baking dish.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the sauce is bubbling.
