Easy Fruit Pasta Bake

2 cups short pasta (e.g., penne or fusilli)

1 cup strawberries, hulled and sliced

1 cup blueberries

1 cup diced peaches (fresh or canned)

1 cup ricotta cheese

1 cup Greek yogurt

1/2 cup honey

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1 cup shredded mozzarella cheese

1 tablespoon olive oil

A pinch of salt

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the pasta: Bring a large pot of salted water to a boil. Add the short pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the fruit mixture: In a large mixing bowl, combine the sliced strawberries, blueberries, and diced peaches. Toss gently to combine and set aside.

        Mix the creamy base: In another mixing bowl, whisk together the ricotta cheese, Greek yogurt, honey, vanilla extract, cinnamon, nutmeg, and a pinch of salt until smooth and creamy.

          Combine pasta and fruit: In a large baking dish, mix the cooked pasta and the fruit mixture. Pour the creamy base over the pasta and fruit, then gently fold everything together until well combined.

            Layer mozzarella: Sprinkle the shredded mozzarella cheese evenly over the top of the pasta mixture.

              Bake: Drizzle olive oil over the top and place the baking dish in the preheated oven. Bake for 25-30 minutes, or until the cheese is bubbly and golden.

                Cool & serve: Remove from the oven and let it cool for a few minutes. Slice and serve warm, optionally garnished with a drizzle of honey and fresh mint for added flair!
