2 cups vegetable broth (or water)

2 tablespoons pickle juice

1/4 cup red onion, thinly sliced

1/2 cup cherry tomatoes, halved

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit for 5 minutes covered.

    Blanch the Green Beans: While the rice is cooking, bring a small pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes, until bright green and tender-crisp. Drain and immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain again after a few minutes.

      Prepare the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, pickle juice, garlic powder, onion powder, salt, and pepper. Adjust seasoning to your taste.
