1 large cucumber, peeled and sliced

2 limes, juiced

1/4 cup fresh mint leaves

2 tablespoons honey (or agave syrup for a vegan option)

4 cups sparkling water or tonic water

Ice cubes

Lime slices and mint sprigs for garnish

Prepare the Cucumber: In a blender, combine the sliced cucumber with half of the lime juice. Blend until smooth. If desired, strain the mixture through a fine mesh sieve into a bowl or pitcher to remove the pulp.

    Mix the Sweetener: In the pitcher with the cucumber juice, add the remaining lime juice, honey, and fresh mint leaves. Stir well until the honey is fully dissolved. Adjust sweetness to taste if necessary.
