2 medium cucumbers, thinly sliced

2 medium apples (preferably Granny Smith), julienned

1 medium carrot, grated

1/4 red cabbage, finely shredded

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: pinch of red pepper flakes for heat

Prepare the Vegetables: In a large mixing bowl, combine the thinly sliced cucumbers, julienned apples, grated carrot, shredded red cabbage, and sliced red onion.
