2 medium zucchinis

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon Italian seasoning

1/4 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Olive oil spray or cooking spray

Optional: marinara sauce for dipping

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the Zucchini: Slice the zucchinis into long, thin strips (about 1/4 inch thick) resembling fries. Lay them on paper towels and sprinkle lightly with salt to draw out excess moisture. Let them sit for about 15 minutes, then pat them dry with another paper towel.

      Set Up the Breading Station: In a shallow bowl, whisk the eggs together. In a separate bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
