Crunchy Tofu Rainbow Stir-Fry

14 oz (400g) firm tofu, pressed and cubed

2 tablespoons cornstarch

3 tablespoons vegetable oil (divided)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

1 cup mushrooms, sliced (shiitake or cremini)

3 cloves garlic, minced

1-inch piece ginger, grated

3 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

½ teaspoon red pepper flakes (optional)

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions
 

Prepare the Tofu:

    Start by pressing the tofu to remove excess moisture. Cube the tofu and toss it in cornstarch until evenly coated. This will help achieve a nice crunch when cooked.

      Fry the Tofu:

        In a large non-stick skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the tofu cubes to the pan in a single layer. Cook for about 3-4 minutes on each side or until golden brown and crispy. Remove the tofu from the pan and set aside.

          Sauté the Vegetables:

            In the same pan, add the remaining tablespoon of oil. Toss in the minced garlic and grated ginger, sauté for about 30 seconds until fragrant. Then add the sliced red and yellow bell peppers, broccoli florets, snap peas, carrot, and mushrooms. Stir-fry the vegetables for about 5-7 minutes until they are tender-crisp.

              Combine and Flavor:

                Return the crispy tofu to the pan with the vegetables. Add soy sauce, hoisin sauce, sesame oil, and red pepper flakes (if using). Gently stir everything together, ensuring the tofu and veggies are well coated in the sauce. Cook for an additional 2-3 minutes, allowing the flavors to meld.

                  Serve and Garnish:
