4 large whole wheat tortillas

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded lettuce

1 small red onion, thinly sliced

1/2 cup shredded cheddar cheese (optional)

1/4 cup fresh cilantro, chopped

1/2 teaspoon chili powder

1/2 teaspoon cumin

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup Greek yogurt or sour cream (for dressing)

1 tablespoon lime juice

1 tablespoon olive oil

Instructions
 

Make the Dressing: In a small bowl, whisk together the Greek yogurt (or sour cream), lime juice, olive oil, chili powder, cumin, salt, and black pepper. Set aside.

    Prepare the Filling: In a large mixing bowl, combine the black beans, corn, diced red bell pepper, cherry tomatoes, diced avocado, shredded lettuce, sliced red onion, and fresh cilantro. Gently toss the ingredients together until well mixed.

      Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon about 1/4 of the veggie filling onto the center of the tortilla. Drizzle a tablespoon of the dressing over the filling.

        Wrap It Up: Fold in the sides of the tortilla, then roll it up from the bottom to the top, encasing the filling snugly. Repeat this process with the remaining tortillas and filling.
