Crunchy Peanut Butter Rice Bars

2 cups crispy rice cereal

1 cup creamy or crunchy peanut butter (your choice)

1/2 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1/4 cup mini chocolate chips (optional)

1/4 cup crushed nuts (almonds, peanuts, or walnuts)

A pinch of sea salt

1 teaspoon vanilla extract

Instructions
 

Prepare the Baking Dish: Line an 8x8-inch (or 9x9-inch) baking dish with parchment paper, leaving some overhang on the edges for easy removal later. Set aside.

    Mix the Wet Ingredients: In a medium saucepan over low heat, combine the creamy or crunchy peanut butter and honey (or maple syrup). Stir continuously until the mixture is smooth and well combined.

      Incorporate Cocoa and Vanilla: Once the peanut butter and honey are melted together, sift in the unsweetened cocoa powder. Stir until fully combined, ensuring there are no lumps. Add the vanilla extract and salt, mixing to incorporate.

        Combine with Rice Cereal: Remove the saucepan from the heat. In a large mixing bowl, add the crispy rice cereal. Pour the warm peanut butter mixture over the cereal and use a spatula to gently fold the ingredients together. Mix until the cereal is evenly coated.

          Add Chocolate Chips and Nuts: If using, fold in the mini chocolate chips and crushed nuts until well distributed within the mixture.

            Press into the Dish: Transfer the mixture into the prepared baking dish. Use a spatula or your hands (lightly greased with oil) to firmly press the mixture into an even layer.

              Chill and Set: Place the baking dish in the refrigerator for at least 1 hour, or until the bars are firm and set.

                Slice and Serve: Once set, lift the bars from the dish using the parchment paper overhang. Cut into squares or rectangles as desired. Store leftovers in an airtight container at room temperature or in the refrigerator.
