Crunchy Panko Crusted Halloumi

250g halloumi cheese

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Olive oil, for frying

Lemon wedges, for serving

Instructions
 

Prepare the Halloumi: Slice the halloumi cheese into 1/2-inch thick slices. Pat them dry with a paper towel to remove excess moisture.

    Set Up Your Breading Station: In three shallow bowls, prepare your breading station. In the first bowl, add the all-purpose flour mixed with a pinch of salt and black pepper. In the second bowl, whisk together the eggs and Dijon mustard until well blended. In the third bowl, mix the panko breadcrumbs, garlic powder, smoked paprika, and a bit more salt and pepper.

      Bread the Halloumi: Take each slice of halloumi and coat it first in the flour, shaking off the excess. Next, dip it in the egg mixture, allowing any excess to drip off before finally coating it in the panko breadcrumb mixture, pressing gently to adhere.

        Heat the Oil: In a large skillet, pour enough olive oil to cover the bottom of the pan (about 1/4 inch) and heat it over medium-high heat. You'll know it's ready when a small piece of breadcrumb sizzles upon contact.

          Fry the Halloumi: Carefully add the breaded halloumi slices to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Use tongs to flip them gently.
