4 cups frozen sweet corn (or fresh if in season)

2 cups diced ham (smoked or honey ham works best)

1 large onion, chopped

2 cloves garlic, minced

3 medium potatoes, diced (about 2 cups)

1 red bell pepper, diced

4 cups low-sodium chicken broth

2 cups half-and-half cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt & pepper to taste

Fresh parsley or chives for garnish (optional)

1 tablespoon olive oil

Prep the Ingredients: Begin by chopping the onion, garlic, potatoes, and red bell pepper. Set aside.

    Sauté the Aromatics: In a skillet over medium heat, add olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until softened. Add the minced garlic and sauté for another minute until fragrant.

      Combine in the Crockpot: Transfer the sautéed onions and garlic into the crockpot. Add the frozen corn, diced ham, diced potatoes, and red bell pepper. Stir to combine.

        Add Liquid Ingredients: Pour in the chicken broth and sprinkle in the dried thyme, smoked paprika, salt, and pepper. Stir to ensure all the ingredients are mixed well.

          Cook the Chowder: Cover the crockpot and cook on low for about 6-7 hours, or on high for 3-4 hours, until the potatoes are tender.

            Finish with Cream: About 30 minutes before serving, stir in the half-and-half cream. Allow the chowder to cook for an additional 30 minutes on low to warm through.
