1 pound cooked turkey, shredded (leftover or rotisserie)

4 cups low-sodium chicken broth

2 cups butternut squash, peeled and cubed

1 cup celery, diced

1 cup potatoes, diced (Yukon Gold or red)

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon ground sage

Salt and pepper to taste

1 cup fresh spinach or kale, roughly chopped

1 can (15 oz) diced tomatoes (with juices)

1/2 cup corn (frozen or canned)

1 tablespoon olive oil (for sautéing)

Sauté the Aromatics: In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent (about 3-4 minutes). This will bring out the flavors in your soup.
