Crispy Tofu Fajita Wraps

1 block (14 oz) firm tofu, pressed and drained

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

1 bell pepper (any color), sliced

1 medium onion, sliced

1 tablespoon lime juice

4 large tortillas (flour or corn)

1 cup shredded lettuce

½ cup diced tomatoes

½ cup shredded cheese (optional)

Salsa and/or guacamole for serving

Instructions
 

Prepare the Tofu: Cut the drained tofu into bite-sized cubes. In a large bowl, combine olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Add the tofu cubes and toss until well coated. Let marinate for about 15 minutes.

    Cook the Tofu: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated tofu in a single layer. Cook for about 5-7 minutes, flipping occasionally until crispy and golden brown on all sides. Remove the tofu from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté for about 5-6 minutes until the vegetables are tender and slightly charred. Add lime juice towards the end and stir well to combine.

        Assemble the Wraps: Warm the tortillas in a separate pan or in the microwave for 20 seconds to make them pliable. On each tortilla, layer a generous amount of crispy tofu, sautéed bell pepper and onion, shredded lettuce, diced tomatoes, and cheese if using.

          Fold and Serve: Fold in the sides of the tortilla, then roll from the edge closest to you, encasing the filling tightly. Serve immediately with salsa and guacamole on the side for dipping.
