Crispy Pepper Jack Potato Cakes

2 large russet potatoes, peeled and roughly chopped

1 cup Pepper Jack cheese, shredded

1/2 cup green onions, finely chopped

1/4 cup fresh cilantro, chopped

1 large egg

1/2 cup all-purpose flour

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup breadcrumbs (Panko works great)

Vegetable oil, for frying

Cook the Potatoes: Boil the chopped russet potatoes in salted water until they are tender, about 15-20 minutes. Drain and let them cool slightly.

    Mash: In a large bowl, mash the cooked potatoes until smooth. You can leave a few lumps for texture if desired.

      Combine Ingredients: Add the shredded Pepper Jack cheese, green onions, cilantro, egg, flour, garlic powder, smoked paprika, and salt and pepper to the mashed potatoes. Mix until everything is well incorporated.

        Form Cakes: Once mixed, use your hands to form the potato mixture into small patties, about 3 inches in diameter and 1/2 inch thick. Place them on a parchment-lined baking sheet.

          Coat the Patties: In a shallow dish, add the breadcrumbs. Dip each potato cake into the breadcrumbs, coating both sides, and place them back on the baking sheet.

            Fry the Cakes: Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once hot, carefully place a few potato cakes in the skillet, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy.

              Drain: Once cooked, transfer the potato cakes to a plate lined with paper towels to absorb any excess oil. Repeat with the remaining cakes.
