4 medium-sized russet potatoes, washed and thinly sliced

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 cup black beans, drained and rinsed

1 jalapeño, sliced (optional for heat)

1 ripe avocado, diced

½ cup fresh cilantro, chopped

½ cup sour cream or Greek yogurt

Lime wedges for serving

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: In a large bowl, toss the thinly sliced potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.

      Bake the Potatoes: Spread the potato slices in a single layer on a large baking sheet. Bake for about 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy.

        Layer with Cheese: Once the potatoes are crispy, remove them from the oven and reduce the temperature to 375°F (190°C). In a large oven-safe skillet, layer half of the baked potato slices, followed by half of the black beans, jalapeño slices, and a mix of cheddar, mozzarella, and Parmesan cheese.

          Repeat Layers: Add the remaining potato slices, followed by the rest of the black beans, jalapeños, and top with the remaining cheese.
