2 medium eggplants, cut into sticks (about 1/2 inch thick)

1 cup all-purpose flour

3 large eggs

1 cup breadcrumbs (Panko for extra crispiness)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray or olive oil for drizzling

Fresh parsley, chopped (for garnish)

Prepare the Eggplants: Slice the eggplants into sticks. If desired, sprinkle them lightly with salt and let them sit for about 30 minutes to draw out moisture and bitterness. Rinse and pat dry with a paper towel.
