Ingredients

4 cod fillets (6 oz each)

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

2 large eggs

2 tablespoons Dijon mustard

1 lemon, zested

Olive oil cooking spray or oil for drizzling

Instructions

Prep the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Make the Coating: In a mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, onion powder, paprika, salt, and pepper. Mix thoroughly to combine.

Prepare the Egg Wash: In a separate bowl, whisk together the eggs, Dijon mustard, and lemon zest until well combined.

Coat the Cod: Pat the cod fillets dry with paper towels to remove excess moisture. Dip each fillet into the egg mixture, ensuring it’s fully coated, then dredge it in the breadcrumb and Parmesan mixture, pressing gently to ensure that the coating adheres well.

Arrange on the Baking Sheet: Place the coated cod fillets onto the prepared baking sheet. If desired, lightly spray or drizzle a bit of olive oil on top of the fillets for extra crispiness.

Bake: Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork, and the crust is golden brown.

Serve: Serve immediately with lemon wedges and a sprinkle of fresh parsley for garnish. This dish pairs beautifully with a side salad or steamed vegetables.
