4 large carrots, peeled and sliced thinly into chips

1 cup grated Parmesan cheese

1 teaspoon garlic powder

2 tablespoons olive oil

1 cup shredded cheddar cheese

1/2 cup black beans, drained and rinsed

1/2 cup diced tomatoes

1/4 cup sliced jalapeños (pickled or fresh)

1/4 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Optional: avocado slices or guacamole for topping

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    Prepare Carrot Chips: In a bowl, toss the carrot slices with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.

      Bake Carrot Chips: Spread the seasoned carrot slices in a single layer on the prepared baking sheet. Bake for 20-25 minutes, flipping halfway through, until they are crispy and golden brown. Keep an eye on them to prevent burning.
