4 (6-8 oz) cod fillets, skinless

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

2 tbsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

2 tbsp olive oil

Lemon wedges for serving

For the Herb Sauce:

1/2 cup Greek yogurt or sour cream

1/4 cup mayonnaise

2 tbsp fresh lemon juice

1 tbsp fresh dill, chopped

1 tbsp fresh parsley, chopped

1 clove garlic, minced

    Prepare the Cod: Pat the cod fillets dry with paper towels. Season both sides with salt and pepper. Set aside.
