12 oz (340g) mozzarella cheese sticks, cut in half

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (optional for a kick)

Salt and pepper to taste

Oil for frying (vegetable or canola)

Marinara sauce, for serving

Prepare the Cheese: Start by placing the halved mozzarella sticks in the freezer for about 30 minutes. This will help them hold their shape during frying.

    Set Up the Breading Station: In three separate bowls, prepare your breading stations.

      - In the first bowl, add the all-purpose flour seasoned with salt and pepper.

        - In the second bowl, whisk the large eggs until well combined.

          - In the third bowl, combine the breadcrumbs with garlic powder, onion powder, oregano, cayenne pepper (if using), and a pinch of salt.

            Coat the Cheese: Take the chilled mozzarella sticks out of the freezer. Dip each stick first into the flour, making sure it’s fully coated. Shake off any excess flour, then dip it into the beaten eggs, ensuring it's completely covered. Finally, roll the stick in the breadcrumb mixture, pressing gently to adhere the crumbs. Repeat this process for all sticks.

              Double Dip (Optional): For extra crunch, dip the breaded cheese sticks back into the egg and then into the breadcrumbs again.

                Heat the Oil: In a deep frying pan or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping in a small piece of bread; if it sizzles and bubbles, it’s time to fry.

                  Fry the Cheese Sticks: Carefully place a few cheese sticks in the hot oil (do not overcrowd). Fry for 1-2 minutes on each side or until golden brown and crispy.

                    Drain and Cool: Once fried, use a slotted spoon to remove the sticks from the oil. Place them on a plate lined with paper towels to drain excess oil.
