4 large russet potatoes, scrubbed and cut into wedges

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon sea salt

½ teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Optional: grated Parmesan cheese (for serving)

Instructions
 

Preheat the Skillet: Place a large cast-iron skillet over medium heat to warm up while you prepare the potatoes.

    Prepare the Potatoes: After cutting the potatoes into wedges, rinse them in cold water to remove excess starch. Pat them dry with a clean kitchen towel.

      Season the Wedges: In a large mixing bowl, combine olive oil, garlic powder, onion powder, smoked paprika, oregano, thyme, sea salt, and black pepper. Add the potato wedges and toss until they are evenly coated with the oil and seasoning mixture.

        Cook the Potatoes: Carefully transfer the seasoned potato wedges to the preheated skillet, arranging them in a single layer. Cook for about 6-8 minutes on one side until they start to brown and crisp.

          Flip and Cook: Using tongs or a spatula, flip the wedges and cook for another 6-8 minutes, or until they are golden and crispy all around. You may need to adjust the heat to prevent burning.
