Crispy Garlic Tofu Bowls

1 block firm tofu (14 oz), drained and pressed

2 tablespoons cornstarch

4 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon freshly grated ginger

1 tablespoon rice vinegar

2 cups cooked brown rice (or quinoa)

1 cup broccoli florets

1 cup bell peppers, sliced

1 carrot, julienned

2 green onions, chopped

Sesame seeds for garnish

Salt and pepper to taste

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. In a bowl, toss the tofu with cornstarch, salt, and pepper until evenly coated.

    Cook the Tofu: Heat olive oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook for about 4-5 minutes on each side until golden brown and crispy. Remove and set aside.

      Prepare the Sauce: In the same skillet, add minced garlic and ginger. Sauté over medium heat until fragrant (about 30 seconds). Stir in soy sauce, sesame oil, and rice vinegar, cooking for another minute.

        Stir-Fry the Vegetables: Add the broccoli, bell peppers, and carrot to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp. Season with salt and pepper to taste.

          Combine Everything: Return the crispy tofu to the skillet, mixing gently with the vegetables and sauce until well-coated. Remove from heat.

            Assemble the Bowls: Divide the cooked brown rice or quinoa into serving bowls. Top with the tofu-vegetable mixture, sprinkle with chopped green onions and sesame seeds for garnish.
