4 medium-sized russet potatoes

1/4 cup olive oil

4 cloves garlic, minced

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 cup shredded sharp cheddar cheese

1/4 cup crumbled bacon (optional)

1/4 cup sour cream

2 tablespoons fresh chives, chopped

1 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet lined with parchment paper for easy cleanup.

    Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Pierce each potato several times with a fork. Place them directly on the oven rack and bake for about 45 minutes, or until fork-tender.

      Scoop Out the Flesh: Once the potatoes are cool enough to handle, cut them in half lengthwise. Using a spoon, carefully scoop out most of the flesh, leaving about 1/4 inch of potato on the skin to maintain their structure. (Save the potato flesh for another use, like mashed potatoes!)

        Create the Garlic Oil: In a small bowl, mix the olive oil, minced garlic, sea salt, black pepper, smoked paprika, and red pepper flakes (if using).

          Brush the Skins: Place the potato skins on the prepared baking sheet, cut side up. Brush the garlic oil mixture generously onto the skins, ensuring every corner is coated.

            Bake to Crisp: Roast the potato skins in the preheated oven for 20-25 minutes, or until they are golden brown and crispy.

              Add Cheese and Bacon: Remove the skins from the oven and sprinkle shredded cheddar cheese and crumbled bacon (if using) evenly over each one. Return the potato skins to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
