Crispy Falafel Stuffed Sweet Potatoes

Ingredients
  

4 medium sweet potatoes

1 cup canned chickpeas, drained and rinsed

1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

1/2 cup breadcrumbs (or gluten-free breadcrumbs)

1/4 cup tahini

1 tbsp lemon juice

Olive oil for drizzling

Optional toppings: diced tomatoes, cucumber, tahini sauce, or yogurt

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Sweet Potatoes:

      - Wash and scrub the sweet potatoes to remove any dirt.

        - Pierce each sweet potato several times with a fork to allow steam to escape.

          - Place them on a baking sheet and drizzle with olive oil, rolling to coat evenly.

            - Bake for 45-60 minutes, or until they are tender and easily pierced with a fork.

              Prepare the Falafel Mixture:

                - In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, pepper, and breadcrumbs.

                  - Pulse until a coarse mixture forms. The mixture should hold together when pressed but not be completely smooth.

                    Form the Falafel Balls:

                      - Using your hands, form small balls or patties from the mixture (about 1.5 inches in diameter).

                        - Arrange them on a parchment-lined baking tray.

                          Bake the Falafel:

                            - Preheat another oven to 375°F (190°C).

                              - Drizzle the falafel balls lightly with olive oil.

                                - Bake the falafel for 20-25 minutes, turning halfway through, until they are golden brown and crispy on the outside.

                                  Prepare the Tahini Sauce:

                                    - In a small bowl, whisk together the tahini, lemon juice, a pinch of salt, and water until smooth. Adjust the consistency by adding more water if needed.

                                      Stuff Sweet Potatoes:

                                        - Once the sweet potatoes are baked, let them cool slightly.

                                          - Slice each sweet potato down the middle, gently opening them up.

                                            - Inside each sweet potato, place 3-4 crispy falafel balls.

                                              Serve:

                                                - Drizzle the tahini sauce over the stuffed sweet potatoes.

                                                  - Top with diced tomatoes, cucumber, or a dollop of yogurt if desired.
