Ingredients

1 lb chicken breast, cut into bite-sized pieces

1 cup shredded unsweetened coconut

1 cup panko breadcrumbs

1 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional for heat)

1 cup coconut milk (for marinating)

Cooking oil (for frying)

Instructions

Marinate the Chicken: In a bowl, combine chicken pieces and coconut milk. Let them marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor and tenderness.

    Prepare the Breading Stations:

      - In one shallow dish, place the all-purpose flour seasoned with garlic powder, onion powder, salt, black pepper, paprika, and cayenne pepper (if using).

        - In a second dish, beat the two large eggs together.

          - In a third shallow dish, combine the shredded coconut and panko breadcrumbs.

            Bread the Chicken:

              - Remove chicken pieces from the marinade, shaking off excess coconut milk.

                - Dredge each piece first in the seasoned flour, making sure it's coated evenly.

                  - Dip the floured chicken in the beaten eggs, allowing any excess to drip off.

                    - Finally, roll the chicken in the coconut-panko mixture, pressing gently to ensure it adheres well.

Heat the Oil: In a large skillet, pour enough cooking oil to cover the bottom (about 1/4 inch deep) and heat over medium-high heat until shimmering.

Fry the Chicken Bites: Carefully add the coated chicken pieces to the hot oil in batches, making sure not to overcrowd the pan. Fry for 3-4 minutes on each side or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

Drain and Serve: Using a slotted spoon, transfer the chicken bites to a paper towel-lined plate to drain excess oil. Serve warm with your choice of dipping sauce (such as sweet chili sauce, honey mustard, or a spicy aioli).
