2 boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional)

Salt and pepper to taste

Vegetable oil for frying

For the Avocado Rice:

1 cup jasmine rice

2 cups chicken broth (or water)

1 ripe avocado, mashed

Juice of 1 lime

Salt to taste

Fresh cilantro, chopped, for garnish

For Assembly:

4 large lettuce leaves (such as romaine or butter lettuce)

Sliced radishes (for garnish)

Sriracha or your favorite dipping sauce (optional)

Marinate the Chicken: In a bowl, soak the chicken breasts in buttermilk and sprinkle with a bit of salt and pepper. Cover and let marinate in the refrigerator for at least 30 minutes or up to 2 hours for better flavor and tenderness.

    Prepare for Frying: In a shallow dish, combine flour, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and pepper. In another dish, place the panko breadcrumbs.

      Bread the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, then dip back into the buttermilk, and finally coat with panko breadcrumbs, pressing gently to adhere.
