8 ounces feta cheese, preferably block-style

1 cup panko bread crumbs

½ cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

2 tablespoons fresh parsley, finely chopped (plus more for garnish)

1 large egg

¼ cup all-purpose flour

Salt and pepper, to taste

Olive oil spray (for coating)

    Prepare Feta: Cut the feta cheese block into 1-inch cubes. Be gentle to keep the shapes intact.
