Crispy Bacon & Egg Breakfast Grilled Cheese

This recipe combines crispy bacon, perfectly fried eggs, and gooey sharp cheddar cheese, all nestled in thick-cut sourdough bread. 4 slices of thick-cut sourdough bread

4 large eggs

8 slices of crispy bacon

4 slices of sharp cheddar cheese

2 tablespoons unsalted butter, softened

Salt and pepper to taste

Fresh chives, chopped (optional, for garnish)

Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove and drain excess grease on paper towels. Leave a tablespoon of bacon fat in the skillet for the eggs.

    Prepare the Eggs: In the same skillet, crack in the eggs, keeping them sunny-side up or cooking to your preferred doneness. Season with a pinch of salt and pepper. Cook until the whites are set but the yolks are still runny, about 4-5 minutes. Remove from the skillet and set aside.

      Assemble the Sandwiches: Preheat your griddle or a large non-stick skillet over medium heat. Butter one side of each slice of sourdough bread. On the unbuttered side of two slices, layer two slices of cheddar cheese, followed by two slices of bacon, one fried egg, and the remaining slices of cheddar cheese. Top with the other two slices of bread, buttered side up.

        Grill the Sandwiches: Carefully place the sandwiches on the preheated griddle. Cook for about 3-4 minutes until the bottom is golden brown and crispy. Gently flip the sandwiches and press down slightly with a spatula. Grill for another 3-4 minutes on the other side.

          Serve: Once both sides are golden and the cheese is melting, remove from heat and cut the sandwiches in half. Garnish with fresh chives, if desired, and serve immediately for the best cheesy, gooey experience.
