2 medium zucchinis

1 cup of breadcrumbs (panko or regular)

½ cup grated parmesan cheese

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika (optional)

Salt and pepper to taste

2 large eggs

Cooking spray (or olive oil for brushing)

Prep the Zucchini: Rinse and dry the zucchinis. Cut the ends off and slice them into thin rounds, about ¼ inch thick. Pat the slices dry with a paper towel to remove excess moisture, which will help them crisp up.

    Make the Coating: In a bowl, combine the breadcrumbs, grated parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to ensure even distribution of flavors.

      Prepare the Egg Wash: In a separate bowl, beat the eggs until well combined. This will help the breadcrumb mixture adhere to the zucchini slices.
