Ingredients

4 medium-sized russet potatoes

3 tablespoons olive oil

2 teaspoons dried rosemary (or 1 tablespoon fresh rosemary, finely chopped)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (optional for a smoky flavor)

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for heat)

Instructions

Prep the Potatoes: Wash the russet potatoes thoroughly under cold water to remove any dirt. Leave the skin on for extra texture and nutrients. Cut each potato into wedges (approximately 8 wedges per potato).

Soak the Wedges: Place the potato wedges in a bowl of cold water and let them soak for about 30 minutes. This helps remove excess starch, leading to crispier wedges.

Season: After soaking, drain the potatoes and pat them dry with a clean kitchen towel. In a large mixing bowl, combine the olive oil, dried rosemary, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. Mix well.

Coat the Wedges: Add the dried potato wedges to the bowl with the seasoning mixture. Toss until all the wedges are evenly coated with the oil and spices.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Air Fry: Arrange the potato wedges in a single layer in the air fryer basket. Do not overcrowd; you may need to work in batches. Cook the wedges at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through to ensure even cooking. The wedges should be golden brown and crispy.

Serve: Once cooked, remove the wedges from the air fryer and let them cool for a couple of minutes. Serve warm with your favorite dipping sauce, such as ketchup or garlic aioli.
